Inspector notes: Observed TCS foods (steamed vegetables) in steam well being hot held less than 135F. CA - Discussed with PIC the importance of hot holding TCS foods at or above 135F and during inspection realized steam well was not working even after adding water. PIC then put pan of water on grill with vegetables is metal insert pan with holes covered with metal lid and vegetables that had not been out from more than 4 hours were reheated to 160F plus during inspection. PIC will look at having steam well replaced.
