Inspector notes: Observed multiple foods stored uncovered in the main kitchen's RIC (a container of cut lettuce and a container of shredded carrots). Also observed multiple sauce containers on a pushcart uncovered and not in use in the main kitchen. Except when cooling, food items must be covered in order to protect from overhead contamination. COS: PIC placed covers on all items in the RIC and pushcart.

Inspector notes: Observed in the main kitchen, a pushcart holding multiple sauce containers lined with a cloth. Also observed in the main kitchen a storage rack holding clean utensils lines with a cloth. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Stated to PIC to remove cloth from the pushcart and shelving rack and replace with a material that is smooths, nonabsorbent, and easily cleanable.

CA: Advised PIC to increase cleaning frequency of microwave and ice machine.
