Inspector notes: Observed lettuce which was not being properly cold held in a prep top unit with a temperature of 52 degrees. Lettuce had been in prep top for less than 4 hours. PIC placed lettuce in reach in to cool to 41F. Observed cheesecake in a drink cooler that had a temperature of 55F. PIC moved cheesecake to commercial reach in.
