Observation: An employee was observed washing equipment and utensils in a three-compartment sink without completing the sanitizing step after cleaning. Corrective Action: utensils and food-contact surfaces must be sanitized after cleaning and before use. The employee prepared a chlorine sanitizer solution at 50 ppm and properly sanitized the cleaned equipment.
