Inspector notes: Observed that soda nuzzles in soda fountain where severely degraded and had small pieces falling off of them when EHS inspected using an antiseptic wipe. COS: Management discarded the contaminated/spoiled food items. CA: Management stated that they would rearrange the inside of the main kitchen and store all food items inside if the facility to be observed more frequently and easier.

Inspector notes: Observed during the course of this inspection that the facility had two containers of raw chicken stored inside of a reach in cooler above completely cooked and cooled beef products. COS: Management re arranged the chicken stored inside of the unit and placed it at the lowest level of the reach in cooler below cooked meats. CA: Management stated that staff will be trained to properly store all raw animal foods in a way that cross contamination with cooked ready to eat foods is prevented. Management will train staff to follow the "swim, walk, fly" principle where raw seafood is stored at the top level, raw pork/beef products in the middle range and all raw chicken products at the bottom, "ready to eat" or fully cooked meats will always be stored at the highest levels.

Inspector notes: Observed during the course of this inspection that the facility prep top cooler located next to the grill was holding multiple tcs food items (raw meats) at temps between 59-65 deg f with an ambient temp of 64. COS: Management discarded all tcs food items from inside of the unit. CA: Management stated that the machine was not plugged back in from a previous cleaning and plugged the unit back into the power source. Glynn EH instructed management not to use the equipment until we have verified that the unit can properly hold tcs food items at 41 deg f or below.
