Inspector notes: Observed all time/temperature control for safety (TCS) foods in prep top/reach-in unit being cold held above 41°F. Ambient temperature of unit was around 53°F with the temperature of TCS foods ranging between 49-56°F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. COS by discarding. Facility only has two coolers in main kitchen area therefore it is imperative that both are in good working condition. Unit must be fixed within 72 hours. Health Authority will follow-up within this time to ensure corrections have been made. Do not store TCS foods in unit unit minimum cold holding temperature can be maintained.
