In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi). Note: Observed a container of water on the table storing ice cream scoops in between uses @ a temperature of 60F. PIC removed ice cream scoops and sanitized them and was educated on proper storing of ice cream scoops in containers of water and the appropriate temperature the water must be if they choose to store in a container of water.
