Inspector notes: Observed several Time/Temperature Control for Safety (TCS) foods inside of the prep cooler (meat and cheese cooler) above 41 F: Provolone (53F), Pepperoni (48F), sliced Turkey (48F), Tuna (44F), and Chicken Chunks (52F). The ambient air temperature is at 55 F. All cold-hold TCS foods must be 41 F or below. Corrected On-Site (COS): The food items were inside of the unit for 2 hours. The food items were moved to the walk-in freezer to decrease its temperature rapidly. Have the unit serviced/repaired.
