6-1A - proper cold holding temperatures (corrected on site)
Inspector notes: Observed both prep-top coolers not in temperature. The meats PTC had: Ham at 49F, Tuna at 43F, Fried eggs at 48F, and Chicken bites at 48. The veggie PTC also had multiple items out of temperature. Those include Shredded cheese at 48F, sliced tomatoes at 48F, and Lettuce at 52F. Informed PIC on cold holding temperatures and recommended to move all TCS foods to WIC and replace with in temperature food items. PIC understood and moved items to the WIC. Ensure all cold holding items are 41F or below. I will be back next week to ensure both PTC are in temperature.
