Higher temperatures observed around outer edges of prep unit lid near where lid does not completely seal; discussed obtaining a lid that completely seals to maintain 41 degrees F or below in cooler. Owner will contact DPH when proper sealing lid is installed.

Discussed monitoring unit to ensure products maintain 41 degrees F, and ensuring containers are not overfilled. Vegetable cold hold unit appears to not maintain temperature; owner on site to evaluate unit and will contact repairman if needed.
