Inspector notes: Observed damaged walls in the dish pit area from water exposure; cinderblock exposed from missing paint; mold on walls. (5) Maintenance and Operation. (a) Good Repair. All physical facilities shall be maintained in good repair. (b) Cleaning, Frequency and Restrictions. 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. 2. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. EHS informed the PIC of the need for the facility to clean re-seal the walls.

Inspector notes: EHS observed TCS food items (see temp logs) two-door REF near entrance of kitchen with temp ranges between 44-50 degrees Fahrenheit. Kitchen Manager informed EHS that REF did have issues, however it was repaired last week. Facility was closed down due to water boil advisory and re-opened on Wednesday, so no temp logs were done for today or yesterday. (f) Time/Temperature Control for Safety Food, Hot and Cold Holding.
