Inspector notes: Observed opened container ready-to-eat potentially hazardous TCS food (sliced bologna - opened 3/6, cheddar cheese - opened 3/8) stored in the facility exceeding 7-day limit. Corrective Action: Discussed date-marking procedures with PIC. PIC discarded the bologna and cheese.

Inspector notes: Observed warewashing machine with chlorine sanitizer not testing at minimum concentration with drying agent. The machine was not in use at the time, only the 3-compartment sink. Per PIC, there was a technician servicing machine the last week. The machine was installed after food permit was issued. Corrective Action: Discussed monitoring warewashing machine to ensure sanitizer on the utensil service measures 50-100 ppm at end of the cycle. PIC placed a "do not use" sign on the machine and will have it serviced by a licensed technician and all agents, including rinsing and drying, must be reviewed by the Health Department. Documentation of services and agents are required. The machine must be rechecked by the Health Department prior to use.
