Inspector notes: Observed in RIC #1, raw beef patty (1 bag) stored directly touching pre-cooked sausage patty and 1 bag of chili. Also, observed in RIC 3 a container of raw shell eggs stored above multiple containers of ready-to-eat condiments. Advised PIC that all TCS foods (raw) and ready-to-eat foods shall be stored according to final internal cooking temperatures. COS: PIC rearranged RIC 1 and RIC 3 for proper storage hierarchy.
