6-1D - time as a public health control: procedures and records
Inspector notes: When asked the PIC if they used time over temp as control on items (Chili, small hot dogs and large hot dogs etc) he stated that they did however, the food was past the expired time limit sitting in warmers. the Time expired at 1:546 pm- the PIC stated that they had not been changed out. Corrective action: staff needs to follow proper procedures when using Time as a control and also have Items marked properly and clearly identified and time defined. After discussion with PIC he discarded food product and restocked supplies with new date/ time markers.

Inspector notes: Observed walk in freezer door and door jam Heat strip not working, Slushie machine not working, Fryer Not working and the milk shake / blizzard machine not in working order. All equipment needs to be properly repaired and maintained in good working condition.

6-1D - time as a public health control: procedures and records
Inspector notes: Observed sliced tomatoes and shredded lettuce reading above 41 degress on the Cold hold food prep line. When asked the CFSM on site if they were using time instead of temp for control she said she thought they did. I asked he to show me the SOP for this practice. She could not show me any plan that they were using time. No proper provisions were put in place such as labels with start time etc were observed on the pans. The temp of the tomatoes read 46 degrees and the lettuce was at 47 degrees. I took the temp ... and then the CFSM took the temp while on the phone with another manager. Corrective Action : Proper Time for control Processes need to be written out and approved by the State Health Authority.
