Inspector notes: Observed heavy build up of soil and mold-like material in ice machine. Food Contact Surfaces and Utensils - Cleaning Frequency (P, C) (b) Equipment Food-Contact Surfaces and Utensils. (iv) In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. Note: PIC stated ice machine was almost due for cleaning and will increase cleaning frequency.

Inspector notes: Observed trash bags piled outside of dumpster. A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean. Corrective Actions: Manager stated trash bags will be cleaned and placed in dumpster.

Inspector notes: Observed employee preparing food while wearing bracelets. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food Note: Employee immediately removed bracelets.

Inspector notes: Observed QAC sanitizer to register at <150 ppm A QAC sanitizer must have a concentration of 150-400 ppm Note: PIC immediately made a new sanitizer solution.
