Inspector notes: At time of inspection, there was no detectable concentration of sanitizer on the dishes, after running a couple of cycles in the warewashing machine. COS: PIC realized that the jug of chlorine sanitizer was empty & replaced with a new jug. After priming the sanitizer and running the machine a couple of more times, sanitizer was detected.

Inspector notes: At time of inspection, observed a container labeled "spicy cream cheese" (house-made) in the walk-in cooler, bearing a date label stating "11/29." It is believed by the PIC that "11/29" may have been the date it was frozen, before being placed in the walk-in cooler, but PIC is unsure. COS: PIC discarded the cream cheese. PIC will ensure that foods are properly date-labeled to discard within 7 days, for all TCS foods.

PIC will contact Cheney Bros to return and troubleshoot the issue. Until such time that warewashing machine is capable of properly sanitizing dishes/equipment, use 3-compartment sink to wash, rinse, and sanitize all dishes/utensils/equipment.
