Foods were removed from cooler 15-20 minutes prior to inspection. COS: Foods relocated to walk in cooler to cool back down. Discussed with PIC to not remove foods from a temperature controlled device such as a cooler until the foods are ready to be prepared right away to avoid temperature abuse. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above.
