Inspector notes: Observed a TCS food/beverage cooling using not effective methods. Observed milk with oats cooling in a tall plastic container (about 8 inches tall) with ice only touching the bottom 1-2 inches of the container. CA: TCS foods shall be cooled by Placing the food in shallow pans; (ii) Separating the food into smaller or thinner portions; (iii) Using rapid cooling equipment; (iv) Stirring the food in a container placed in an ice water bath; (v) Using containers that facilitate heat transfer; (vi) Adding ice as an ingredient; (vii) Other effective methods. COS: PIC placed milk with oats into a shallow, metal pan and placed that pan in an ice bath to finish cooling.
