Inspector notes: Wrong test strips were on site and being used for sanitizer solution-- Quats test strips were being used when they were utilizing at that time Chlorine in the 3 Compartment dish sin. cos staff removed chlorine sanitizer component in the dish sink, (since they did not have chlorine test strips) and made new sanitizer solution to quats steramine product which they had appropriate test strips for.

Inspector notes: Wiping cloths were observed throughout the kitchen sitting on food prep surfaces. When not in use wiping cloths need to be stored in sanitizer solution in buckets or in laundry bags. COS staff gathered and removed rags and wiped down the counters with sanitizer.

I discussed how that creates cross contamination, Staff discarded food product. Also using a towel to set dishes on after washing. We discussed this as well and the towel was removed
