Inspector notes: Observed bar dish machine dispensing chlorine at <10 ppm due to low amount of chemical in container. Chlorine must dispense at 50 ppm. COS by replacing chemical and priming dish machine. Chlorine then dispensed at 100 ppm.

Inspector notes: Observed chowder prepared between 8-10am not cooled to 70°F within 2 hours of reaching 135°F. Chowder was 109°F at 3:04PM. Staff members did not know exact time chowder was prepared due to morning prep staff being gone for the day. Cooked time/temperature control for safety food shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); P and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less. COS by discarding. It is the responsibility of the PIC to ensure that cooling logs are being properly maintained since food is still cooling when morning prep staff leaves.
