Inspector notes: Observed old labels stuck to food containers after cleaning. Observed old food stuck to clean dishware/utensils. Observed buildup of slime in the interior of ice machine. RCA: Old labels are to be removed from dishware before cleaning. Equipment, food-contact surfaces, and utensils shall be clean to sight and touch.

Inspector notes: Observed two foil wrapped whole turkeys with temperatures above 41F. Upon questioning, turkeys had been cooked and cooled the day before (2PM) and therefore had not reached 41F within 6 hours. COS CA: PIC discarded turkeys. Foods must be cooled from 135F-70F within 2 hours and then from 70F-41F within 4 hours.
