Inspector notes: Observed raw chicken on counter @ 67F. PIC states she just seasoned and put in WIC. Placed in freezer to get it below/ at 41F. Observed multiple items in RIC ( diced tomatoes @ 53F prep 4/18, sliced tomatoes @ 43F prep date 4/18, cheese @ 44F prep 4/16, lettuce @ 53F prep 4/16). All cold hold items must be 41F or below. Asked PIC to discard and PIC states she will discard. PIC states they have had trouble w/ PTC/RIC getting too hot and they have someone checking it tomorrow.
