Inspector notes: One of the 2 main dumpsters outside the facility had no lid on it at all, leaving it open to the elements. CA: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: 1. Inside the food service establishment if the receptacles and units: (i) Contain food residue and are not in continuous use; or (ii) After they are filled; and 2. With tight-fitting lids or doors if kept outside the food service establishment. While there the owner of the building contacted the city for a new dumpster and verifed with the public works that it was being addressed. Will be corrected within 72 Hours.

Inspector notes: Observed sliced cheese sitting on an ice bath at at 62 degrees Fahrenheit. The cheese was sitting on a stack of 3 styrofoam plates that were the only thing in direct contact with the ice not allowing for heat to transfer efficiently. CA: Time/temperature control for safety food being cold held must maintained at a temperature of 41 degrees Fahrenheit or below. COS: Cheese had only been out for a little over an hour. It was placed back into the working walk in cooler to cool back to proper temperature. Cheese should be placed in a metal container that is more thermally conductive and then the metal container placed into the ice bath wih the ice covering the sides of the container for further serving of the cheese in this manner.
