EH advised PIC Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC is to clean and determine if there is an issue causing leak. PIC took photos of unit to send to proper maintenance.

Inspector notes: EHS observed the following non-food contact surfaces: -In trailer, tops of drawers in prep line were stained. -In trailer, the fryer tops and grill coverers had debris under lids. -In trailer, the interior bottom of main grill had accumulated carbonized food -In trailer, the interior bottom of the RIC at the prep top cooler had stains and food debris The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. EHS advised PIC to clean affected areas.
