Inspector notes: Observed in base of operation sour cream(46F) and salsa (45F) inside the reach in cooler in the bar area; ambient air temperature of the unit is 43F. Observed buttermilk (46F), Half-Half (46F) and Sour Cream (45F). My thermometer and the unit's internal thermometer both indicated an ambient temperature of 49F. Per person in charge the items were placed inside the unit Friday. ure Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Inspector notes: Observed cooked chili insdie a pot inside the reach in cooler with a temperature of 50F. Per person in charge the chili was placed inside the unit yesterday. Cooked time/temperature control for safety food shall be cooled: Within a total of 6 hours from 135°F to 41°F or less. Chili was discarded.
