Inspector notes: - Observed mechanical dish machine with chlorine concentration not at minimum strength while dishes where being washed. - COS, PIC changed out chlorine bucket and primed machine. Machine is now putting out concentration at 100 ppm. Corrective action: Dish machine shall be checked daily before dishes are washed to ensure machine is putting out sanitizer at proper strength (50-100ppm) for chlorine. Employees should write down concentration daily for 3-c sink and dish machine to ensure dishes are being properly sanitized.

Inspector notes: - Observed mold/slime buildup on interior surfaces of tea spouts on tea urns after cleaning. - COS, spouts were scrubbed, washed, rinsed, and sanitized by PIC and left to air dry before placing back on urn. Corrective action: Tea spouts must be taken off tea urn, top unscrewed, and washed, rinsed, and sanitized and air dried before placing back on tea urn.

Inspector notes: - Observed mechanical dish machine in kitchen not sanitizing dishes at proper concentration. Bleach was reading 0 ppm in dish machine. Buckets had just been replaced and machine not primed so sanitizer was not being put into machine properly for dishes to be properly sanitized. - COS, maintenance primed machine and sanitizer working. Concentration was reading 50-100 ppm. Ensure dish machine is checked daily and that sanitizer is at 50-100 ppm for bleach.
