5-1B - proper reheating procedures for hot holding (corrected on site)
Inspector notes: Observed improper procedures being used for reheating for hot holding. Observed beans, macaroni and cheese, and gravy improperly reheated in the CVAP machine due to the Chubb warmer not working. All TCS product was observed at 120 degrees f. As a corrective action, PIC reheated all TCS foods observed in the hotel pan thawing to 165 degrees f. PIC will email a copy of the service work order for the repair of the Chubb warmer to Robert.Lewis1@dph.ga.gov.

Inspector notes: Observed wiping cloth buckets containing quaternary ammonium sanitizing solution did not meet the proper minimum strength requirements of 200-400 PPM. PIC remade the sanitizer buckets. Once the correction was completed by the PIC, I observed the Quaternary Ammonium sanitizer at 200 ppm
