4-2B - food-contact surfaces: cleaned & sanitized
Inspector notes: Observed build-up on the baffle of bulk ice machine. Dish machine wasn't pulling any sanitizer to properly sanitize dishes. RCA: Told PIC that they need to do a deep clean on ice machine to limit the amount of built up in ice machine. Also told PIC to use the 3-compartment sink until dish machine is fixed.

Inspector notes: Observed several TCS food items to be above 41F, (chicken, beef, tomatoes, tuna, haddock other temperatures are listed in the report). Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below RCA/CA: Being that items were in prep top cooler for more than 4 hours, I had the PIC discard the items and replace them with new items. PIC also stated that they have been having issues with the unit and that they will likely order a new one.

Inspector notes: Observed tuna and salmon in packaging being thawed out in the walk in cooler. The package says to remove from package before thawing. Both temperatures were above 41F while in the walk in cooler. RCA: Told PIC that they need to make sure that they remove packaging before thawing out anything. Thawing. Except as specified in paragraph 4 of this subsection, time/temperature control for safety food shall be thawed: Under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or Completely submerged under running water: At a water temperature of 70°F (21°C) or below
