Inspector notes: Observed wire rack shelves/shelving and walk-in cooler handles to equipment and solid shelf surfaces on bottom/lower rack of tables with build up residues/accumulation on them in the dry storage, prep areas and walk-in cooler. Repeat. Clean shelves at a frequency to prevent accumulation. Beside fan guard in metallic housing needs cleaning in walk-in cooler and Walk-In freezer door has residue. Keep clean to avoid contamination of food or food contact surfaces such as equipment or utensils.
