Inspector notes: Observed wiping cloths stored in multiple buckets with quat sanitizing solution not at proper minimum strength. All buckets measured 100 ppm or less and were labeled to be changed at 2:37 PM and were unchanged at 3:40 PM. Corrective Action: PIC was notified. PIC designated food service employee to change sanitizer solutions in all buckets to measure 200-400 200 ppm. PIC was educated on changing these solutions at least every 4 hours.

Inspector notes: Observed potentially hazardous TCS food (crispy cup pepperoni labeled 'KEEP FROZEN - "PERISHABLE"') thawing on prep table counter at room temperature. Per PIC, they pulled the pepperoni from the freezer to thaw and placed them on the counter to make it easier to fill up working container on pizza line. Corrective Action: Discussed approved thawing methods and cold-holding with PIC. The pepperoni were found to be less than 2 hours old and were moved to the walk-in cooler to rapidly cool back down to 41 deg F or less.

No food was stored in the cooler but per PIC they store thin crusts in this area. Corrective Action: Discussed possible causes of water accumulation with PIC. Due to concerns for contamination, no food will be placed in this cooler until serviced by a licensed technician. Please call the Health Department at 706-295-6316 to have the cooler rechecked before use.
