Observed the prep-top unit to have old food debris accumulated in the crevices of the unit. Observed reach-in cooler gaskets located beneath the prep-top area to have an accumulation of old food debris. RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
