Inspector notes: Observed a container of raw wings on an ice bath holding at 75F. When checked there was no more ice underneath. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below if holding cold. Employee added more ice to the container and the wings were coming down in temperature.
