Inspector notes: Observed sliced cheese in the prep top cooler holding at a temperature of 43-47 degrees F. Observed egg souffle in the walk-in cooler holding at a temperature of 46 degrees F with a prep date of 3/18. Observed shredded cheese not fully submerged in ice bath near steam well holding at a temperature of 59 degrees F. Observed chicken sandwich and beef sandwich in a reach in cooler holding temperatures between 47-52 degrees F COS. Discussed batch prepping of sandwhiches to ensure that TCS items stay below 41 F. Sliced cheese was placed in the prep top at 6am, to be discarded after 4 hours of holding.
