Inspector notes: Observed cheese (44F) and tomatoes (44F) stored in prep top cooler not at safe temperatures. Upon further investigation, items were double panned in cooler due to the lack of stabilizing bars. CA: PIC discarded both items and will store non-TCS items in these slots to provide adequate cooling to cheese and tomatoes.

Inspector notes: Observed mac and cheese stored on top of oven not holding required temperatures of 135F or above. CA: Mac and Cheese had been held for one hour. It had been cooked and cooled in the appropriate time table but had been placed in the cooler too hot. PIC iced all out of temperature food as the rice had been put in the cooler within the hour.
