Inspector notes: Observed prep top cooler not capable of maintaining proper temperatures of 41F or below. Observed all items within unit to hold temperatures of 46F-52F. Most product was prepared at open today around 8:00am-9:00am. All items were moved to Time As A Public Health Control and discarded at the 4hr mark. All other product held longer than this morning was discarded. Items include: ham, aioli, cream cheese, cheese slices, cut tomatoes, guacamole, smoked salmon. CA: PIC will contact health department area inspector when the unit is repaired to verify the functionality of the unit. PIC will not store any product within the unit overnight and only use the unit with ice baths to maintain proper temperatures.
