Inspector notes: Observed whipped cream being cold held above 41°F in open face prep top unit in dining area.[SEE TEMPERATURE OBSERVATIONS]. Time/temperature control for safety (TCS) foods must be cold held at 41°F or below. COS by discarding. Health Authority recommends using a 4 hour time as a public health control (TPHC) procedure for these items. Must place time documentation from when removed from temperature control and discard whatever is left after 4 hours. Initial temperature of products must be 41F or below prior to placing on TPHC.
