Inspector notes: Observed milk stored in the front service reach-in cooler to be held above the safe temperature of 41F. CA: PIC placed milks in reach-in unit at 8:30am. Time As a Public Health control shall be used for food safety and all unused milks shall be discarded at 2:30pm.

Inspector notes: Observed BBQ pork stored within the warming cabinet in the main kitchen to be held below the safe temperature of 135F. CA: PIC had records that indicated that BBQ pork reached above 180F during initial reheat. PIC removed BBQ pork from the warming cabinet and re-heated the food to 165F. PIC raised the temperature on the warming cabinet before placing BBQ pork back inside.
