Inspector notes: Observed TCS foods (corn salsa, sliced tomatoes, and american cheese) cold holding in an ice bath in a broken prep top cooler at 51, 60, and 59F, respectively. Advised PIC that cold TCS foods must be held at less than 41F. Food was discarded and replaced.

Advised PIC that the restaurant must have an employee with food safety responsibilities that has a food safety manager certification. The certificate must be displayed in view of the customers. Establishment given 30 days for correction.

Inspector notes: Observed chlorine sanitizer at bar with concentration higher than measurable range. Advised PIC that chlorine sanitizer must be between 50-100ppm. PIC added fresh water to bucket to bring concentration to 100ppm.

Inspector notes: Observed ROP fish bearing label that it must remain frozen, not removed from package after thawing. Advised PIC that food must be removed from modified atmosphere packaging before the food is thawed. PIC discarded fish and began to properly thaw fish from freezer.
