Must use separate equipment for handling raw meats vs. handling cooked meats & ready to eat foods. COS by discarding tortillas and obtaining 2 clean spatulas to be used for ready to eat food.

Health Authority will email PIC TPHC procedure if PIC decided to utilize TPHC for the salsa instead of an ice bath.

Will re-email cooling methods handout. Highly suggest using cooling logs as well.

Health AUthority suggests installing smooth panels behind chemical storage shelf and obtaining smooth mats for shelves.
