6-1B - proper hot holding temperatures
Inspector notes: Observed TCS food being hot held in warmer at temp of 111 F. During inspection I had PIC remove and place wings into the 2nd warmer and they warmed up to the appropriate temperature. CA: Warmers will need to be looked at by maintenance. We had to run the warmers at 200 F in order to maintain a temp above 135 F. PIC will contact me once maintenance has repaired warmer.
