Inspector notes: Observed in the main kitchen in the reach in cooler: 1. Container of raw chicken stored above mozzarella cheese and raw whiting fish. 2. Box of raw eggs stored on the top shelf above cooked beans, refried beans and containers of cooked beef. 3. Container of raw eggs stored behind cooked collard greens and American cheese. 4. 2 containers of raw chicken touching 2 containers of raw whiting fish. 5. Ground beef stored above raw whiting fish. CA: Raw animal foods must be separated according to minimum required cook temperature and stored in a way to prevent cross contamination of food. Ready to eat foods must be stored away from raw animal foods to prevent contamination. COS: PIC stored raw animal food items on the bottom shelf not touching each other.
