Inspector notes: Observed TCS foods in cooler pass-thru being cold held above 41°F. Ambient temperature of unit was ~46°F with external thermometer reading 48°F. TCS foods must be cold held at 41°F or below. COS by moving food to walk-in. Do not store TCS foods in unit until fixed.

6-1D - time as a public health control: procedures and records
Inspector notes: Observed incorrect time documentation on salsa, sour cream, salad, and ranch utilizing time as a public health control (TPHC). Time on log sheet was for time items were moved from walk-in to front service coolers--not the time products were removed from temperature control. Also, new product moved from cooler pass-thru began time in the danger zone as unit cooler was not maintaining minimum cold holding temperature. When using TPHC, (1) time product was removed from temperature control must be placed on/near product(s), (2) initial temperature must be 41°F or below, and items must be discarded within 4 hours.
