Inspector notes: Observed multiple shelves throughout the kitchen with either cardboard or plastic covering them. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. COS: PIC and employees removed and discarded all plastic and carboard lining all shelves in the kitchen.

Inspector notes: Observed racks for holding clean utensils and equipment and racks within the walk in cooler unclean with accumulation of brown debris. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Discussed with PIC that the equipment and food must be removed from the racks before cleaning and sanitizing the racks. If the PIC thinks that the accumulation of debris in uncleanable, then they must order new, clean, and durable racks for storage.
