Observed bag of baby spinach in walk-in cooler that had a wilted, slimy appearance. Observed a bag of shredded lettuce in walk-in cooler with a brown appearance. Corrected on site by discarding.

Inspector notes: Observed salads on serving line at 10:35AM. These had a time label with 11:00 AM. Temperature was observed at 53°F. These labels should be filled in with the time that they are placed on the serving line. Employee stated that these were left on the line from yesterday. If these items were placed on the line yesterday, they should have been discarded by 3PM yesterday per the procedure on the label. If these are all consumed and more salads are placed on the serving line, the time should be updated on the label. Corrected on site by discarding.
