Inspector notes: Observed cook handling raw chicken and beef with gloved hands and failing to change gloves prior to switching to handling ready-to-eat (RTE) foods such as tortillas. Health Authority and restaurant management coached employee on this however, employee repeated same practice on the following order. If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS by discarding contaminated food. NOTE: best practice after handling raw meats/seafood/poultry is to immediately remove gloves prior to switching tasks (i.e., prior to handling tongs, spatulas, etc.).
