Inspector notes: Observed TCS foods (shredded cheese, sliced cheese, and hot dogs) being cold held in prep/reach-in cooler unit above 41F. CA - Discussed with CFSM the importance of maintaining TCS foods at or below 41F in cold holding units and that door was not closing properly. The CFSM moved all items to walk-in cooler or other reach-in cooler, since they had just restocked within the past 2 hours. CFSM also called maintenance during inspection, and they are to come out later today to repair unit. If unit cannot be repaired, it will need to be replaced.

Inspector notes: Observed rust from a bolt on the food contact portion of the ice machine. CA: CFSM will have until 4/22/2024 to have bolt replaced and rust cleaned from food contact surface. Follow-up on 4/22/2024: The maintenance came and didn't have the correct parts to fix the ice machine. I will follow-up on 4/26/2024. Follow-up on 4/25/2024: The rusted bolt was replaced with a stainless steel bolt and the rust was cleaned from the ice machine.
