2-2E - response procedures for vomiting & diarrheal events
Inspector notes: Inquired about clean up procedure for vomiting and diarrheal events and PIC stated that they use the purple substance at the mop sink. When the inspector reviewed the chemical it was identified as an degreaser. Inspector reviewed the sanitizer that is used for the 3 compartment sink and sanitizer buckets and observed it does not kill norovirus. PIC showed inspector another chemical that she thought may be helpful. Inspector observed that it also did not kill norovirus. CA: Informed PIC that establishment would need to get a chemical that would kill norovirus in the event they have a vomiting or diarrheal event.

Inspector notes: Observed drink nozzles at the drive through had a black substance on the clear insert of 4 nozzles. COS: Inspector removed each nozzle and requested that the PIC clean them prior to replacing them. PIC cleaned each nozzle so that they were clear of the black substance.

Inspector notes: Observed multiple ceiling tiles throughout the facility missing or water damaged. Also observed multiple cracked and/or broken tiles throughout the facility with standing water inside of them. Equipment in facility was visibly dirty with handles to walk in, reach in coolers and doors having sticky built on substance. CA: Ceiling tiles shall be replaced. Establishment should be maintained in good repair. Facility should conduct a deep clean of all equipment and walls to remove excessive food build.

Inspector notes: Observed wiping clothes to be stored in QUAT sanitizer exceeding the test strip chart (blue). Concentration of sanitizer was too high. COS/CA: PIC added cold water to sanitizer buckets and retested to give a ppm of 200. RCA: Facility shall test the sanitizer buckets prior to use to ensure that the concentration does not exceed DPH Rule 511-6-1-.05(6)(n).

Inspector notes: Observed upright freezer across from fryers to have a ice accumulation on the bottom and sides of interior of unit. PIC states that when the equipment goes into defrost and then turns back on it, the ice tends to accumulate. RCA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. 2. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. 3. Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that can contaminate food when the container is opened.
