Inspector notes: Observed improper cold holding of tcs food items above 41 degrees in reach in cooler without active time control. See temperature chart. Corrective Action: PIC was notified, per discussion with PIC food items were within time parameters. Reach-in cooler is not able to maintain temperature of 41F or below and current ice bath was melted ice water. Discussed increasing frequency at which ice bath is replaced or temporary time as a public health control until cooler is repaired and able to maintain temperature of 41F or below.
