6-1A - proper cold holding temperatures
Inspector notes: Observed stand up cold hold unit in Kitchen not maintaining proper cold hold temps at 41 degrees or below. Interion thermometers read 40 and 42 Degrees and food items sliced Deli Meat ham- 60 degrees and beef patties (raw bulk, sealed) 54 degrees were placed in unit this morning. Unit needs to be repaired and or thermostat may need to be adjusted and temp logs need to be kept. Food out of temp was discarded and or if possible placed into freezer for rapid cooling.

Inspector notes: Observed dirty dishes sitting directly on floor under 3 compartment sink ( to be cleaned at a later time) Equipment and dishes should be stored 6 inches off the floor. COS removed from floor to be cleaned.
