Inspector notes: Observed storage shelf by the raw chicken walk in cooler with food debris and rust accumulating due to chipped paint. Observed shelf in the walk in cooler with debris and rust accumulation. Observed clean shelf in the ware washing area with black accumulation. Observed mold behind the caulking of the 3 compartment sink. PIC was advised to have the old caulking removed, mold cleaned, and re-caulk above the 3 compartment sink. PIC was also advised to clean and repaint all shelves with food grade paint and to keep a cleaning regiment for the shelves.
